Cheddar Broccoli Soup (Panera Style)
Nothing like having some hot delicious soup or stew on a cold winter day to help keep the body warm and full. Certainly, a winter essential to have on the family menu. I love having me a bowl of cheddar broccoli soup loaded with the classic healthy ingredient's; broccoli, carrots and a hint of garlic to top it off.
Panera bread was the first time I tried the cheddar broccoli soup in a bread bowl, if you loved their soup, you would absolutely love this recipe! The great thing about making this soup is that it doesn't require a lot of time to cook, and it reheats really well! Everyone has their own way on how they whip up their favorite soup recipe in the kitchen rather you use more, less or substitute the ingredients to give it that bomb taste to your likings.
Below are the ingredients and instructions on how I accomplished this cheddar broccoli soup
Ingredients
4 tablespoons butter ½ stick
½ onion chopped
2 cloves garlic minced
4 tablespoon all-purpose flour
2 cups chicken stock
1 tsp salt (kosher)
½ tsp black pepper
¼ tsp paprika
3 cups broccoli florets
1 finely chopped carrot or
2 cups of milk or heavy cream
2 cups mild cheddar cheese
Instructions
Melt butter in a large pot or whichever you prefer over medium-high heat. Add the onion and cook 3-5 minutes until soft and light gold. Add the garlic and sauté for about another minute.
Add flour and whisk for about 1-2 minutes or until the flour begins to turn golden. Pour in the chicken stock, broccoli florets, carrots, and seasoning. Bring to a boil then reduce heat to medium-low and simmer for 15 minutes or until the broccoli and carrots are cooked through.
Stir in milk and cheddar cheese and simmer for another 2 minutes. Taste and adjust seasoning if needed.
Serve with in a bread bowl if desired.
